The migration from an iPhone 8 to a 13 should be painless. If you are going to buy the new phone from the Apple Store, that is the perfect place to have the transfer done. Having just paid for a new phone, they should be very happy to walk you through the transfer right then and there.
You will need to bring your old phone and your Apple Watch. You should not need your iPad, but bring it along, anyway. If you do backups at home, do one before heading out to the store. If you back up to iCloud, that can be done in the store. Here's what to expect.
First, the technician who helps you will probably unpair your Watch from your old iPhone (unless the watch can transfer with the rest). Then, you will transfer your SIM card from the old phone to the new one. Both phones will be paired with a WiFi network inside the store and both connected to chargers. At one point in the startup of the new phone, you will be asked if you want to copy from an old phone or create a new one. Choose to copy from an old phone. Your new phone will then show a moire pattern, a throbbing green blob, on its screen. Your old phone will show a pop-up asking if this is the phone you want to copy. Tap on Yes and point the 8's camera at the 13's green blob. You will be instructed to leave the phones near each other during the operation. After a couple of reboots, you will be done with the 8 and follow the instructions on the 13 to set your Pass Code, register your first face and log in to your Apple ID. The 13 will then download all of the apps it needs from the app store and return you to the home page. If your Watch had to be manually moved, it will now be paired with your new phone.
Enjoy!
