How do I delete multiple accounts on family sharing

You can remove Apple IDs from Family Sharing as long as they have an age set to 13 years old or older. Link-> Remove members from Family Sharing - Apple Support
If the age is set to less than 13, they cannot be removed only moved to another Family Group.
Also, people should not have multiple accounts unless it's absolutely necessary. Removing the account from Family Sharing will not delete account, so it will continue to exist and be accessible.
