I am locked out of my old AppleID that’s attached to my watch, unfortunately locked out of that old email it’s attached too as well, how the heck do I get my Apple Watch unconnected from that Apple ID and attached to my new one?

To sign out of iCloud on your Apple Watch, you'll need to sign out on the paired iPhone:
When you sign out of iCloud on the iPhone that's paired with your Apple Watch, you're automatically signed out of iCloud on your Apple Watch.
