Notes defaults to an annoying gray font - yes, I know how to change it manually, but I do not want to waste time doing this on every Note, sometimes more than once? Change the default to Black or give us a dropdown for Preferences.

Unfortunately, the default Font used in Notes is a System Font and can not be permanently changed.
The user can commence a proposed Notes in a text Editor and format it will.
Then Copy and Paste into Notes.
