Without deleting the hard drive and reinstalling everything (aka, starting over). How can I get to older versions of iMovie and FCPx (that will run on OSx Catalina 10.15) ?

You must erase the hard drive when reverting to an older macOS version (that is supported on your hardware), and then using the last Time Machine backup you set aside (and did not use for the current operating system) before upgrading, to repave the drive with the older operating system, its compatible applications, and your data.
No older Time Machine backup, no revert. Applications designed for Big Sur and Monterey will not work in Catalina.

Apps are built to be compatible only for specific software versions. If running a newer version of the app with your current macOS, that's because that is the version that is compatible. To run older versions of the apps, you would need to run an older operating system.

How do I reinstall everything if the computer won't come back on; maybe plug Seagate backup plus external drive into it? or can I download mac OS Catalina 10.15.7 to a thumb drive from another computer & plug it in to my iMac that quit working?
