colors.

No, Markup can do exactly what you want:

Instructions:

With the image selected in Photos, tap Edit at top right
Tap Markup (pen) button at top right
Tap + button at lower right
Tap empty square icon
Tap multi-colored icon
Tap desired color
Tap X to close Colors
Tap left-most button at the bottom
Tap left-most filled square
Drag the shape to where you want it and use the blue dots to adjust the size and shape
Tap Done at top right
Tap Done at lower right

Markup seems restricted to creating rather than modifying.

I need to replace part of a photo which contains eMail address to match background color.

Result is eMail address is re-colored same as background color and therefore hidden.
