Yes, it will work provided you install the correct Epson scanner drivers for Monterey (macOS 12.x).

After installing the drivers and Epson Scan you might consider getting Vuescan, which is a much more useful and capable scanning app. (But you need the scanner drivers first including the Epson ICA scanner driver for Image Capture.)

You might need to install the latest drivers. As far as I can tell, the drivers seems to be the same for versions from 10.14 Mojave to MacOS 12. Some of these get decent support for years.

That is a very old scanner originally released in 2009. My guess would be its too old. Reach out to Epson directly for guidance on whether there is any way to use it with a very modern MacBook Pro.
