I have PLENTY of iCloud storage space but in the past mth my photos haven't been backing up to iCloud even though my phone has been continuing to go through it's reg. backing-up sessions at night when it's pugged in?

Check the status of your iCloud sync:
Open Photos
Tap library
Scroll to the bottom
See the item count and beneath that, the current cloud status
Leave the device plugged in, connected to a network, and locked.
