"There only seems to be an option for this sheet or all sheets"
Correct, but there are ways around that.
If each of the sheets you want to export fits on a single page, try this:
- Bring the first sheet to the front, then press command-P to open the Print Preparation screen. Check the screen to see if all you want to print from this sheet fits onto a single page. If not, you may need to make some changes to the layout of that sheet, or to its content. When satisfied with the layout and contents of the single page you'll print from this sheet, press command-P again to move to the Print dialogue.
- Select print "This Sheet", then look through the page thumbnails in the dialogue to check that there is now only one page, or to find which page you'll want to print if there is more than one.
- If there are multiple pages, click the button by "From" and enter the page number that Print has determoned for the page you want. If there is only one page, continue to the next step.
- Click the PDF button at bottom left of the Print dialogue, and choose Save as pdf.
The Print software will create a pdf document from the page and save it to your computer.
Repeat the same steps with the second Sheet you want to 'print'.
You can post the two pdf files as they are, or you can combine them into a single two page pdf document to send as a single attachment.
To combine the two into one document:
- Open the first sheet's pdf file using Preview.
- Go to the Edit menu (in Preview) and choose Insert > Page from File.
- Choose the file created from the second sheet you want to include in the pdf document.
Save the resulting pdf document as your sharing doc.

PS: Discovered what Badunit reported above while constructing the document described here. Simpler method could be to 'print' all sheets to a pdf document using the "open in Preview" option, then simply delete all of the pages/sheets you do not want to share from the pdf doc, leaving only the ones you are sharing.
Regarding 'hiding'. Secure hiding can't be done within a Numbers document. You can hide the whole document behind a password, making it openable only by those who know (and remember) the password, but you can't hide parts of it in ways that are not simple to undo.
That said, turning what you want to be seen into a PDF document, and deleting all parts yu do not want to be seen from that document should work well. It's difficult to see what is not there.
