What is the latest software update I can download for my MacBook Pro (13-inch, Mid 2012)? I get errors on most apps now that I am no longer compatible.

The highest version of the OS you'll be able to run ins macOS Catalina (10.15.7) on that machine. You should be able to download it from the App Store.
