You could try "Drafts". I've even been able to take a quick note via Siri:

"Hey Siri, take a note in Drafts"

Siri says what do you want to say.

Start dictating your note.

I find this useful when riding my bike and want to remember an idea or something I heard on a podcast while riding.

There is a iPhone Drafts app that you can then use to view and expand your notes later.

And of course you can view Drafts notes on your Apple Watch.

Apple watch doesn't have a notes app,there are only 3rd party ones.
