An iPhone will use the hardware MAC or will spoof a consistent MAC for its connections to a specific Wi-Fi network.
Apple doesn’t expose details of previous network connections in the UI, and doesn’t keep a connection history log; not past whether a particular SSID and its password is recognized and remembered.

There is nothing on the iPhone will tell you anything about its WiFi history.
If you have your iPhone and Mac set up to both use the same Apple ID and Password for iCloud, you can see on the Mac a list of WiFi networks that devices have connected to in the past.......but there are no details other than the name of the WiFi network and type of security used on the network.
