I have copied over music from my MacPro onto a USB stick and whilst it all appears to be on the USB drive it doesn't play when I plug it into my car stereo which is telling me there is nothing on the USB. Any thoughts on this?

Maybe your car player not support file format what you are using?
-> try to export mp3 format

If the music was downloaded from Apple Music subscription , you won't be able to play or convert the music due copyright restrictions.
