When will Photos be updated to support RAW files for the new Canon R7 camera?
Use Adobe DNG Converter while waiting for macOS native support.

Or use other apps like Lightroom to edit raw.
You don't say which OS you are on, but RAW updates are no longer separate, they come with OS updates. So, as long as you stay current, you are OK. You can also check out this document which lists supported cameras:

There will be a new one for Ventura.
We are just users, so we don't know. It might be a while, though since I imagine any new cameras for Ventura are already teed up.
I had hoped perhaps I missed an update or someone here may have heard something. I hope an update is sometime before that. Long time to wait for folks with the new camera.
