I can do this is Thunderbird using filter folders, but for various reasons would like to switch to Apple Mail.
For example, I have my clients set up as sub-folders in my bookkeeping folder, and while I can see the number of unread emails next to each of the folders in the drop-down list, I'd like the actual emails to show up. I can't figure out how to do this. Any help would be appreciated.

What I think I understand you want doesn’t exist in mail. You have to select the mailbox to show what is in it.

After creating the folders on https://www.icloud.com/mail/ close out of, and reopen, the Mail app on iOS or macOS and you should see the folders.
