When I switched carriers to mint mobile (and switched to new number), my 8 plus iphone became locked and so the sim could not be activated. My phone wasn't locked before, so what caused this and how can I get the phone unloced.

Where, exactly, did you purchase the phone to begin with?
Are you saying it is now locked to Mint Mobile, or you are unable to activate your Mint Mobile SIM because it is locked to the previous carrier? What carrier were you using before you tried to switch to Mint?
Apple does not unlock phones at all. Only the carrier the phone is locked to can do that. Unless your friend bought an unlocked phone directly from Apple, it is NOT an unlocked phone.
Odds are your friend got it from Consumer Cellular. They won’t even talk to you about it if you are not an active CC customer in good standing, and then they will not unlock it unless the device is currently active on their network AND you have maintained service with them for a minimum of 12 months.
Bottom line: That phone can only be used on Consumer Cellular.
The phone was a given to me by a friend when she bought a newer model phone. I had no problem using it with my then carrier, Consumer Cellular. Consumer Cellular said they did not lock the phone and so Apple would have to unlock it.
