Basically guys just like the subject here, I had an Apple Watch linked to my old phone, old phone died, got a new phone….right? Right so here’s the thing new phone? Can’t pair to the watch why? New icloud and the watch is linked to the old phone cause of the iCloud how can I bypass this?

You can ask apple to remove the activation lock online on this page;

If you can't remember/gain access to the apple id that paired the watch to the phone.Take the watch and it's receipt with the serial number along with some photo id and any other proof of ownership to an Apple Store and request that they remove the Activation Lock for you.
