Why does my autocorrect change words that I spell properly?

I've got my phone set to UK english and my keyboard to English (Canada) but my autocorrect is still changing words to the American spelling. It works fine for words like colour, defence, dialogue, etc. As far as I can tell it only changes words that Americans use a Z for instead of an S (realise, organise, paralyse, analyse, recognise, apologise, for example). How do I fix it so it keeps the correct spelling?

iPhone XS, iOS 14

Hello DragonMaker,

Thank you for reaching out to Apple Support Communities, and we'll be happy to help in any way we can. We understand you're having issues with your autocorrect using the incorrect language. We recommend using the U.K. keyboard to avoid having your words correct with a Z. You can also use text replacements for these words as described here: Save keystrokes with text replacements on iPhone - Apple Support

We hope this helps.

Cheers!
