No, Apple Card MasterCard does not offer insurance on vehicles you rent. Renting vehicles for use in Mexico is an entire different level. Very few, if any credit cards cover rental of vehicles in Mexico.
Depending on your length of stay, it may be less expensive if you add a rider to you US policy for a week or two.
