I accidentally saved the wrong password over the correct password in my iCloud keychain. I don't know the original password I had stored, so now I can't access the account. Can I retrieve an old stored password after I have stored a new password over it?

If you have overwritten it, then it is gone. If it is your AppleID password, you can reset it If you forgot your Apple ID password - Apple Support and save the new password.

For future and to avoid such things from happening again.

Export KeyChain Password

Click on the three dots (...) at the bottom of the list and Export All Passwords
