I have an iphone 12 promax and am heading OS and will remove my ( Australian) SIM and purchase a pre paid when I arrive in Italy. Will my APPLE WALLET retain all the digital cards and apps, and will those be visible and functional once I login with my Apple ID? Thank you!!
The wallet is independent of the carrier, and thus of the SIM, so you won’t have a problem with the Wallet. However, for backup you should still carry some cards in the event your phone is lost, stolen or damaged.

Fortunately I am a very seasoned business and leisure traveller and have all the cards and back ups (in separate locations ) - but since COVID this is first OS trip and since ( over last 2 years) have changed from Android to iphone!!
Are you planning on making and receiving local voice calls whilst in Italy, or are you wanting to do data mostly/only?
For data only, I would like to suggest popping your Italian SIM into a pocket WiFi device. Your phone will continue to receive SMS (free) from Australia, but you will be able to use internet services, like maps, using the Italian SIM.
Interesting idea; I like it. I did that years ago, before my carrier (US-AT&T) offered international roaming extension of my home plan at an attractive price.
