no matter what I do I can't lock on landscape mode on Apple TV+. There is no way to watch a show on Apple TV+ while laying on my right side holding the phone vertically. Interestingly only works when I watch on landscape mode and then carefully laying down on my left while rotation lock is off. Am I missing something?

I can't lock on landscape mode.
The orientation lock in Control Center is called Portrait Orientation Lock. So it was never meant for Landscape locking use.

You can trick it in using it while laying down on your right side, by first turning your phone 180°. Then the behavior for turning 90° switches for left and right.

This is what I tested with my iPhone 12 Mini. To keep it landscape, rotate sideways once to get landscape, then once more in the same direction to keep it landscape (notch side down). That is doable in either direction, by doing the first turn halfway in the intended direction. For the visual minded:
