File vault

I want to encrypt a thumb drive, but when I mount it and control-click on it, the "encrypt" option is not there. Any suggestions?

That will depend on how the thumb drive is formatted.

You cannot encrypt a FAT32 or ExFAT volume, but you can do so on an APFS or Mac OS Extended.

You will probably need to reformat the drive as APFS. Then you can encrypt it. You will need to copy your data from the drive and erase it in the process.
