You won't be able to use the watch until the final version of iOS 16 is released unless you re-join the beta program on your phone. There is no way to downgrade the watch from the beta release.
You should have taken the time to actually read the information provided when you joined the beta program.

You can downgrade your watch OS. For that you will have to send the watch to Apple service center and they can do it. I had sent my watch to the service center and got the OS downgraded.
For as far as I know, you cannot downgrade the beta of watchOS. That means that you have downgraded your iPhone to iOS 15, and your watch is still on watchOS 9, and that is why they won't pair anymore
As has already been stated, you can NOT downgrade from the watchOS 9 beta. You really should have read the materials provided to you when you decided to join the beta program.
I have the same issue - updated to iOS 16 beta and watchOS 9 beta.
I opted out of the iOS beta because some apps weren't functioning correctly.
Is my only choice to go back to iOS beta 16 and live without those apps or to live without the watch until the fall??
Is there a way to downgrade the watch back to 8 if I have beta 16 on my phone?
so does that mean I can't use my watch anymore
You can't downgrade watch software, you'll have to wait until later in the year when watchos9 is released.
