Hello. MacOS Monterey has been "installing" since yesterday afternoon and is still giving me the rainbow wheel. What do I need to do to fix this?

If you are stuck—
You can always force quit a shutdown by holding the power button/TouchID for ~6-10 sec.
Force Shut down your Mac.
Log out, sleep, wake, restart or shut down your Mac
Shut down or restart your Mac - Apple Support
reboot and see where this leaves you

From what Previous Version was Monterey installed from ?
User profile associated to your posting is showing MacBook Pro 13″, macOS 11.6
The important element is Big Sur 11.6.
If and only if that is accurate, jumping from an not totally up to date Big Sur maybe be possible but also risky IMHO
Follow previous advise and see what occurs - hopefully successfully
I will bet that you are using Wi-Fi to do the download. if so, that is the problem. Whenever installing an OS update or upgrade, use a wired Ethernet connection. Wi-Fi is just too slow for these very large files and almost always fails.
Only a suggestion the interest of this computer.

In so doing, the User ( you ) will probably receive Specific suggestions to this computer issue
There are factors:
1 - Like poor Wifi connection
2 - Slow wifi connection
3 - Too many other people downloading at the same time and Apple Severs are overloaded
4 - Software on the computer interfering with the download process including AntiVirus Software
Notation: Disabling the AV Software may or may not solve the issue. Removal of the AV Software may increase the chances of the download to perform as expected.
5 - Running behind a VPN which may increase Packet losses or corruption of the download
6 - If via wifi too many Other devices using the wifi at the same time reducing the Bandwidth to your computer.
7 - Best Results are via Ethernet Cable to Router
That's a fair comment. I said what I said because of my experience here on this forum. The Wi-Fi speeds have caused problems with large downloads many times. Ironically, my wife's computer which is connected to the internet via Wi-Fi has never had a problem with installing updates or upgrades, so there can be exceptions. The point is when there is a problem, using an Ethernet connection seems to solve it. For everyday use Wi-Fi should be fine.
I will not totally agree with you there -- being using Wi-Fi to Update macOS never had a problem.
