Is there a way (yet) in iOS 15.5 to disable MMS photos from being cropped into thumbnails- inevitability, the thumbnail always crops out the information that is relevant to why I’m sending the photo…

Do mean like below? (Example from Apple)-
If so, there's no way to disable the curved edges on the photo when sending photos as either SMS/MMS or iMessages. However, the recipient will be able to click the photo to enlarge it (which will not crop anything out).
