Do any owners of M1 MacBook Pro 16" know why my machine running Catalina sometimes freezes while streaming a YouTube video and has to be hard rebooted? Does anyone know a fix?

You would better upgrade your MacBook Pro to Monterey which could solve the issue, though you should get backup by Carbon Copy Cloner or TimeMachine before update to Monterey in a case you would face with trouble.
