In most cases......this is not possible.

The iPhone must have been backed up while all the messages were still on the iPhone......and......the iPhone must not have backed up again after the time that the messages were deleted.

Any chance that these conditions can be met? There are more conditions to be met, but not much sense in proceeding unless the first set of conditions can be met.
