Why won’t my iPhone connect to any Wi-Fi networks all of a sudden? I have updated the software, reset network settings and restarted it several times

Try to optimize the range of the mobile network, see this Apple article:

If you see No Service or Searching on your iPhone or iPad

If you still don't have a 'service' after that, see -> iPhone 7 Repair Program for "No Service" Issues

check router settings -> Recommended settings for Wi-Fi routers and access points

If they are On, turn Off Hotspot & VPN.
