iCloud storage
Does Apple let you purchase the storage that you need or just their preset plans? I currently have 2 TB, but never use that much and I don’t see how to change it.

They only offer 5GB, 50GB, 200GB and 2TB plans. See: iCloud+ plans and pricing - Apple Support
