iPad mini 6th Gen running the latest 15.6. Mail icon no longer displays the number of unread emails in red.

Check your Mail Notification settings:

Settings > Notifications > Mail > Badges - set to ON

Also for each email account you have configured on your iPad:

Settings > Notifications > Mail > Customise > [Mail Account] > Badges - set to ON
