In the Hue & Saturation Filter the Saturation slider will move between -1.0 to +3.0 Are these numbers purely arbitrary ones chosen by Apple or are they universal? Could they be percentages? I often get images where the colours look fine until you really check them out and realise that due to slight flare or some other optical reason the colours are not as intense and clear as they were in real life. Pushing the slider to around +0.5 gives them a nice lift.

No, using these settings won't do any permanent damage or hurt the display of your iPhone at all.
