My wife's name is Lisa. This is a normative spelling. Every time I use voice-to-text on my MacOS products it shows "Leesa," an extremely unusual spelling that I have never typed.
Then it briefly changes to "Lisa" and then decides, nope let's go back to the very unusual spelling of "Leesa." Every time I have to change it, but the dictionary never learns it.
How can I fix this?

Having a name spelled correctly is important. Try adding Lisa to the spelling dictionary to help troubleshoot the behavior:
"Add words to the spelling dictionary
When Pages, Numbers, or Keynote detects a word that it doesn’t recognize, it underlines the word with a dotted red line. You can add the word to the dictionary on your device so that iWork and other apps recognize the word and includes it in spell check:
