It will depend on the system you have on your old Mac. If it is Mojave or older the apps on the old machine may not run on the new machine which will probably running Monterey. That's because with Catalina and newer only 64 bit apps will run. You can download and run the free GO64 app to see which of your apps will run on Monterey and which won't.
I normally run migration assistant an bring over all data including apps because that also brings over activation codes for those 3rd party apps making is much easier.
If you have an app that limits the number of computers it can be run on you'l have to remove the old Mac from the active list before migration and then activate the new Mac.
