I was locked out of my phone with security lockout after entering the wrong password numerous times and I tapped erase iPhone and it had me sign out of Apple ID before erasing and it's taking a very long time to do so, do I just wait longer or should I have it looked at

If your Apple ID is locked or disabled If your Apple ID is locked or disabled - Apple Support
sign out of Apple ID
