how do I name an iPhone in finder so I can distinguish between 2 phones I backup?

Finder listens to what name you have given your iPhone.
An example:
1st iPhone -> iPhone SE
2nd iPhone -> iPhone 12
As soon as you connect the iPhone to your macOS, the corresponding names will appear in Finder.
Those names are also used for the backup, when you make a backup.
