Using Adobe instead of textEdit In ventura I switched to Ventura last night. Now when I'm trying to open some pdfs the files open in Text Edit and I don't want that. Preview Export to PDF I receive a lot of PDF's that I need to add text signatures and initials. When done I used to be able to "Export as PDF" so that the document I signed is no longer editable (at least not as easily). After updating to Monterey that option is greyed out. I can use the Export function but for some reason that leaves my text boxes still editable. Only my signature and initials become permanent.

Okay thank you. So in order to edit or make changes to the file I would have to create a password to open it? Not sure.

If the pdf is password-protected you can't edit it without the password.
