why can't I print a book from ibooks?
It’s a matter of copyright. When you get a book from Apple, you are licensing a digital copy only. You are not allowed to print it. So yes, the only option is to read it on your device.

But the problem is that it's only an e-book. If I wanted a physical copy I couldn't buy one, so is there no other option but to read it on my devices?
Apple Books don't sell physical copies. Go to a bookshop or order a paperback online from elsewhere.
