The Apple Platform Security Guide provides detailed information:

TLS security - Apple Support


To my knowledge, there is no official published matrix that lists TLS version support for each version of iOS.


TLS 1.2 was first added to iOS in iOS 5, so TLS 1.2 should be supported for all versions iOS from iOS8.x. TLS 1.0/1.1 were deprecated with release of iOS/iPadOS15.
