I have an iPhone 12mini and the battery doesn’t last all that long I’m wondering if it would be considered healthy for my phone to keep low power mode switched on at all times and what all does low power mode do or affect

No, leaving low power mode on all the time will not hurt your phone. Note that, when you charge the phone, low power automatically turns off when it charges to 80%.

Ok it says it turns mail fetch off is that something to be concerned about and I can still refresh it manually right?
And I downloaded some files on Wi-Fi took about 4 hours and in that time my battery percentage only decreased 5%
