Shouldn’t this article update the information of using “music” app instead and not iTunes?

Are you referring to using a computer to update your iPad? If so, neither Music nor iTunes is used to update iPad on Mac now. Instead, it's done through the Finder - Update your iPhone, iPad, or iPod touch with the Finder - Apple Support


If you have an older Mac (with macOS Mojave or earlier), you will use iTunes. See here - Update your iPhone, iPad, or iPod touch with iTunes - Apple Support
