If you cannot install it over wifi try and update via a pc or Mac instead
Update your iPhone using a Mac with macOS Catalina or higher
On a Mac with macOS Catalina or higher, you will use the finder in order to upgrade your iPhone. Make sure to Back up your device before starting the upgrade process.
On a Mac with macOS Catalina or later, you will follow the following steps:
Update your iPhone via a Mac running macOS Mojave or earlier, or on a Windows PC
On macOS Mojave or earlier, or on a windows machine, we won't use the Finder to upgrade your iOS

Then the answer is that it isn’t in the user’s ASC profile. It is taken from https://appleid.apple.com - Devices. ASC uses the phone’s serial number to populate the device line at the bottom of first post in a thread.
You need an iPhone 12 or iPhone 13 with 5G service to update over cellular data.
apple.center is correct- you need a 12 or 13. However, your iPhone may not be able to update any further anyway- an iPhone 6S can only be updated to iOS 12.5.5. Is your user profile correct?
Off topic question, where in user profile is displayed the phone model?
Actually, a 6S can be updated to 15.6. A 6 is limited to 12.5.5.
