Do I want all my devices on the same Apple ID or not? When my wife and I are on the same Apple ID we share too much, messages, phone call history, etc. I want to share calendars, but not everything

All of the devices that you use should be on the same Apple ID. You should NOT share an Apple ID with another person. Each person needs their own ID for their devices.

Apple ID is personal. Put your devices on your ID, your wife's devices on her ID. But if you have an iPhone and iPad for example, you can put them both on your Apple ID.
I have 9 devices linked to my Apple ID , they're all mine so thats no problem
