Somehow I have "lost" the signature on outgoing email from one of my 3 Gmail accounts (the other 2 work fine). When I compose an email, the signature does not appear on the email. When I "EDIT signatures" the signature shows as a choice. When I select the signature it does not populate in the email. I have deleted and then re-added the Signature but no luck.

Verify from Mail>Preferences>Sig
drag and drop from "All Signatures" to the preferred account

You could try to open the signature with the "Mail Signature" app, edit and maybe reassign it.

Thank you, I had tried that previously.
Eventually had to call Apple Support:
the solution was to activate iCloud email (even though it had never been turned on previously)
