How to find and reinstall backup to my new iPhone?

My iphone XR was stolen recently and i cannot seem to find and restore the last XR backup onto my new iphone X? Im also getting the a different email address of mine to login in which i possibly created but no longer require. Also im getting confused with iTunes & iCloud? Please can someone assist me ASAP. Thank you!
