My wife's MacBook Air/M1 chip running OS 12.4 says that it is up to date when running Software Update. Is it protected from the latest security flaws?

See if your wife can go to the App Store, search for and download macOS Monterey. If she can it will be the 12.5.1 update so she can install it when the download is finished.
