Probably because they're are migrating over to their own CPU chip, the Apple Silicon M1 and M2, which is faster and more efficient than the Intel CPUs. They do have a 27" Studio Display which will work with the new Mac Mini or the new Studio Mac.
But for integrated 27" screens and Macs see rkaufmann87's reply.

Wouldn't you consider that speculation? Not to mention the 24" M1 iMac. 🧠
You can still find Intel based 27" iMacs in the Apple refurbished section. Also, if you have feedback for Apple please let them know at www.apple.com/feedback.

You can also get a nice Mac mini and then simply buy yourself the display you want. When you get either the MM or 24" iMac get at least 16GB RAM (not upgradeable after purchase) and at least a 1TB SSD.
No one hear can speak to "why" Apple made the decision they did.
That's why I said "probably". But it's not speculation, it's a wild assed guess. Speculation has more data to back it up. 🤭

Thank you for replying. Mine is old and slow compared to all of our new devices, but it's not been used much and is like new--- even the resolution looks amazing. I thought about a refurbished 27", which in reality is much larger looking than the 24", but I will likely go with a new 24" and just suck it up and get used to it. At my age, this will probably be my last desktop purchase. How much larger can they make the iPad?????? LOL
