I buy coffee every morning with Apple Pay but recently I’m being asked for a signature too. Facial ID is required so what is the point of a scribble on an electronic signature line?

I doubt if anyone would disagree w/ you, however this is completely a policy setting decision made between the vendor and their card servicing provider.
Many of have one or two of these places in our “routine.”
It’s Apple Cash. It’s not a bank card. And for a hundred times no issues and then a few weeks ago I had to sign. But not every time. It’s hit and miss. Same store same Apple Cash the n the wallet app.
It’s still a vendor / card service provider (the entity who provides the vendor’s POS and card services processing) “policy” issue.
These are often frustrating to resolve as VERY few owners - who are understandably busy running their business - are usually hamstrung by very “one way” agreements w/ their card servicer.
