You can delete them straight from your iphone by using the following method....
Navigate to the podcast listing, swipe your finger left to right on it-should get a red delete button.
I would still like to be able to see them on my itunes though!Windows XP

In my iTunes Devices=> (my phone) => Podcasts tab, I have "Sync Podcasts" checked, and "Automatically include all unplayed episodes of all podcasts" checked.
All my podcasts that I have not explicitly trashed appear in this tab, even the ones that have removed from the iPhone automatically by iTunes. Whenever I have played an episode, or mark it as played in iTunes, or if I simply delete a podcast from iTunes's Library=>Podcasts list, it will disappear from iPhone. In the first two cases, the episode will remain in the device tab, unchecked. In the case the podcast is trashed in iTunes, it will completely disappear.iPhone 4, MacBookPro, iOS 4

%50 of what I use my iPhone for is podcasts and I always have quite a few on there, adding and deleting dozens each week so this makes things rather inconvenient.iMac, Mac OS X (10.5.5), iPod Touch

I'm having the same issue here...
I found a temporary solution: create a smart playlist on itunes, using the "media kind" + "is" + "podcast" rule. You will be able to see all the podcasts stored in your iphone.
