My Apple Watch couldn’t connect to my phone,
serial number of the watch V0***FX0, I did update doesn’t help

Good to know you took the step of updating your Watch!
Guess you would have made sure it is charged up too.
Wondering if you still see the "problem" message after updating.
and
if this Watch has been connected to your iPhone ok before (or first time pairing / connecting)
and
if so, what was happening when the two stopped connecting.
